Super Easy Spaghetti Recipe
There’s nothing more comforting than a warm bowl of spaghetti with veggies and parmesan. It’s honestly one of my favorite easy spaghetti recipe ever!
Pasta is one of my favorite dishes, so I make it ALOT. It’s super easy to throw together, which is perfect for those nights when I’m just too tired to cook anything complicated.
But easy doesn’t have to mean bland or boring! I love making my pastas creamy and full of flavor. Everyone in my house loves this quick recipe, and I hope you enjoy it just as much!

This pasta is my go to whenever I want something warm, flavorful, and super satisfying but don’t want to spend hours in the kitchen.
It’s packed with fresh veggies, comes together in under 30 minutes, and tastes like so delicious. I love how it’s flexible too, you can easily switch up the ingredients based on what’s in your fridge.
What Inspired This Recipe
One evening I had a mix of leftover vegetables and didn’t feel like doing a grocery run. I tossed together what I had, mushrooms, bell pepper and cherry tomatoes. I added some tomato sauce.
It turned out so delicious I’ve been making it regularly ever since. Now it’s one of those comforting dishes I turn to when I need a pick-me-up or want to impress my family with minimal effort.
Ingredient List
- 4 mushrooms
- 2 mini bell peppers
- A handful of cherry tomatoes
- 1 tablespoon garlic paste
- 1 1/2 cup tomato sauce
- Parmesan cheese (as much as you like)
- Olive oil (enough to lightly coat the pan)
- Spaghetti (or any pasta you have on hand)
- Chili peppers (optional)
Breakdown of Ingredients
Mushrooms: They add a nice earthy flavor and soak up all the saucy goodness. I usually slice them thin so they cook evenly and fast.
Mini Bell Peppers: These bring a bit of sweetness and color. I like using a red and orange one for that beautiful warm tone in the pan.
Cherry Tomatoes: They burst while cooking and give a juicy texture that I love. Plus they make the sauce taste fresher.
Garlic Paste: This is my secret weapon. It gives that instant garlicky flavor without needing to mince anything.
Tomato Sauce: It’s the base of the dish and brings everything together. I use a plain one but feel free to spice it up with herbs.
Parmesan Cheese: Melts right into the sauce and adds that salty, cheesy layer. I also like sprinkling more on top at the end.
Olive Oil: Just enough to sauté everything and keep things smooth and flavorful.
Spaghetti: Classic and comforting. But honestly, any pasta works here—even penne or fusilli.
Chili Peppers: If you like heat, this gives a little kick at the end. I LOVE spicy food!

How to Make It
Cook your pasta in a separate pot. Follow the instructions on the package. I like mine el dante because it just feels perfect!
I start by chopping all the vegetables so they’re ready to go. Then I heat a bit of olive oil in a pan, add in the garlic paste, and let it sizzle for a few seconds.
I toss in the mushrooms, bell peppers, and cherry tomatoes all at once and let them cook down for about 10 minutes until soft and juicy.
Once everything is nicely sautéed, I pour in the tomato sauce. If it starts to stick or feel too thick, I just add a splash of water.
I keep the heat on medium and let it simmer for another 10 minutes. Then I add a generous amount of parmesan cheese and giving it a good stir.
If I’m in the mood for spice, I’ll add in some chili peppers at this point. Lastly, I mix in the cooked pasta until it’s all beautifully coated in the sauce and serve it up with a final sprinkle of parmesan on top.

- Boil Spaghetti per packaging instructions
- Chop the mushrooms, bell peppers, and cherry tomatoes
- Add olive oil to a pan and heat it
- Add in the garlic paste and stir
- Toss in all the chopped veggies
- Cook for 10 minutes until soft

- Add a splash of water if it gets too thick
- Let it simmer on medium heat for another 10 minutes
- Stir in parmesan cheese

- Mix in the cooked pasta
- Serve and top with more parmesan cheese
Quick Tips
If your veggies start to brown too quickly, just lower the heat and add a splash of water. Letting the sauce simmer a bit longer gives it a deeper flavor, especially if you’re using store, bought sauce.
Always taste as you go, that’s the best way to know if it needs more cheese or spice. I don’t usually add extra salt because the tomato sauce already has plenty, especially once the parmesan melts in too.
And don’t forget to save a little bit of your pasta water. Adding a splash into the sauce helps it cling to the noodles better and gives everything a nice silky texture.
Ingredient Replacements
You can easily swap the veggies for whatever you have. Zucchini, spinach, or even frozen peas work great. If you don’t have garlic paste than fresh garlic or garlic powder works too.
And if you’re dairy-free, try nutritional yeast instead of parmesan. Gluten-free pasta works just as well too. This recipe is super forgiving, so make it your own.
