Easy and Flavorful Fall Salads
I love making fall recipes that feel fresh, colorful, and full of seasonal flavor and fall salads have definitely become one of my favorites this time of year. They’re easy to put together, packed with nourishing ingredients, and perfect for when you want something lighter but still full of that cozy fall vibe.
There’s just something so good about mixing roasted vegetables, sweet fruits, hearty greens, and crunchy toppings into one beautiful bowl. Lately I’ve been making salads that feel both simple and elevated, something you could toss together for lunch or serve at a fall dinner party and still get compliments. These are the kind of meals that come together quickly but feel thoughtful and satisfying.

Fall Salads
If you’re looking for easy fall salads to add to your weekly routine or a few new fall recipes to share with family and friends, these five have been on repeat in my kitchen and I think you’ll love them too.
Apple Cranberry Broccoli Salad

This one is fresh and crunchy with just the right mix of sweet and savory. I love how the raw broccoli gives it structure, but it’s balanced by juicy apples, pops of tart cranberry, and creamy crumbles of cheese. Every bite feels like it has a little bit of everything, soft, crisp, sweet, and tangy.
What really makes this salad shine is the layering of textures. Between the snappy broccoli, crisp apples, chewy dried fruit, and nuts, it’s just so fun to eat. And because nothing is too soft or soggy, it holds up beautifully if you want to prep it ahead for lunch or bring it to a gathering.
I usually keep the dressing simple with a light vinaigrette, something slightly sweet and zippy. And it pairs just as well with roasted chicken or a cozy soup as it does on its own as a light lunch.
Kale, Quinoa & Persimmon Salad

I didn’t always love kale salads until I started massaging the kale and pairing it with all the right flavors. Now It’s total fall staple in my kitchen. This one is hearty and nourishing but still feels light and fresh, which makes it perfect for those in-between weather days when you’re not quite ready for heavy comfort food.
The star of this salad is definitely the persimmon. If you’ve never had one, they’re sweet and subtle and just a little unexpected in a salad, kind of like a cross between a pear and an apricot. Paired with fluffy quinoa, crunchy walnuts, and maybe a few dried cranberries or pomegranate seeds, it feels like a big, nourishing bowl of everything I love about fall.
It’s also one of those salads that holds up really well in the fridge. I’ll make a big batch and keep it on hand for busy weekdays, and it always tastes just as good the next day.
Roasted Beet & Butternut Arugula Salad

This salad just looks like fall. The deep purple beets, golden butternut squash, ruby pomegranate seeds, and little bursts of white feta all come together on a bed of fresh arugula. It’s colorful, cozy, and so satisfying.
I’m a big fan of mixing roasted veggies with fresh greens. The contrast of warm and cool, soft and crisp, makes every bite a little more interesting. Arugula adds that peppery brightness that cuts through the sweetness of the squash and beets, and the pomegranate seeds are like little juicy jewels that pop in your mouth.
If I’m feeling fancy, I’ll whip up a maple Dijon vinaigrette or even just a squeeze of lemon with olive oil. And honestly, this salad feels like a full meal on its own, but I’ve also served it alongside baked salmon or even as a pretty Thanksgiving side.
Baby Greens with Roasted Plums & Goat Cheese

This salad feels like the kind of thing you’d be served at a cute little bistro, but it’s so simple to make at home. The mix of baby greens makes a soft, fresh base, and then I add sweet roasted plums, tangy goat cheese, and some toasted nuts. I’ll sometimes throw in a handful of sprouts or pine nuts if I have them.
There’s something really special about the warm, juicy plums against the cool greens and creamy cheese. It’s sweet, savory, and just feels elevated in the best way. Perfect for a dinner party, but also lovely as a weeknight salad when you want something a little out of the ordinary.
I like to finish it with a maple, balsamic dressing or even just a drizzle of honey and a bit of flaky salt. Simple, but it brings everything together so beautifully.
Harvest Salad with Delicata Squash & Pomegranate

This is my ultimate fall rainbow salad. It’s bursting with color, vibrant squash, deep red pomegranate seeds, purple cabbage, mushrooms, even edible flowers if I can find them. And while it looks like something you’d see at a fancy fall brunch, it’s actually really easy to pull together.
Delicata squash is a favorite in my kitchen this time of year because you don’t even have to peel it. Just slice, roast, and toss it in. The sweetness of the squash pairs so well with the freshness of the greens and the juicy pomegranate seeds. I like to add thinly sliced mushrooms for earthiness and some shaved fennel or endive for a little bite.
You could serve this with a citrus vinaigrette or even just a splash of lemon and olive oil. It’s light but totally satisfying—and it always gets compliments when I bring it out.
Why Fall Salads Are My Favorite Right Now
What I love most about these salads is how versatile they are. You can mix and match ingredients, swap out whatever you have on hand, and make them your own. If you don’t have delicata squash, use sweet potatoes. If you don’t have persimmons, try pears. That flexibility is what makes these salads so easy and fun.
And because fall produce is so colorful and full of flavor, you don’t need to overdo it with a complicated dressing or a ton of steps. The ingredients really shine on their own.
I also love that these salads work for so many occasions. I’ve made them for simple lunches at home, packed them up for picnics in the park, and served them alongside bigger meals for dinner parties and holidays. They’re hearty enough to stand on their own but also make the perfect side.
A Few Tips for Building Better Fall Salads
If you’re putting together your own salad this season, here are a few things I always keep in mind:
- Texture is key. I like to balance soft with crunchy—think roasted squash with crispy apples, or creamy cheese with toasted seeds.
- Add something sweet. Dried fruit, fresh pears, roasted plums, or pomegranate seeds all bring a natural sweetness that feels right for fall.
- Go for warm + cool. Roasted veggies over chilled greens? Yes please. It makes the salad feel more comforting without being too heavy.
- Don’t forget the crunch. Toasted walnuts, pecans, sunflower seeds, or crispy chickpeas can make a big difference in flavor and satisfaction.
- Dress it light. A good vinaigrette brings it all together, but I try not to overdo it. Just enough to coat the ingredients and tie everything into one delicious bite.
Fall is one of my favorite times of year to get creative in the kitchen. There’s so much gorgeous produce in season, and it’s the perfect time to refresh your go to meals with something new. These fall salads are some of the easiest ways to do just that, they’re colorful, nourishing, and full of flavor, without needing hours in the kitchen.
I hope you find one or two here that you can add to your fall rotation. They’re easy to make your own and perfect for everything from meal prep to entertaining.
